The morning will focus on Difference From Control Triangulation Cupping. We will discuss how and why roasting professionals use triangulation cupping in quality control. We will discuss how we calibrate to a scale as a sensory analysis group. We will cup 6 tray tables and calibrate our descriptors and our scores Q Grader Exam Style. We will cup 6 tray triangulation tables and scale how different from control the odd cup out is perceived to be.
This year’s roasting challenge will be transitioning a profile from a micro roasting device to a drum roaster. The Academy of Coffee Excellence has 3 Ikawa Pro Roasters and 4 drum roasters available for this challenge. It is very possible that even more equipment will be showing up.
The attendees will be broken into small groups. Each group will be given 300 grams for their Ikawa Profiling to dial in their best roast. Then the teams will be given enough for 3 batches on their drum roasters. The challenge will be to match the Ikawa profile and verify it with a blind Difference From Control Triangulation Cupping.
Another sensory activity that will be going on will be Olfactory Bingo. With our ScentONE kits and our Le Nez kits we will have constructed 5x5 Olfactory Bingo Cards.
