Tickets are $125.00 paid online. Tickets will be sold at the door but paying online makes it easier for us to budget and supply food and drink and other supplies so please register and pay online.

Saturday March 24

Morning Programming

  • Difference From Control Triangulation
  • Lunch will be provided

The morning will focus on Difference From Control Triangulation Cupping. We will discuss how and why roasting professionals use triangulation cupping in quality control. We will discuss how we calibrate to a scale as a sensory analysis group. We will cup 6 tray tables and calibrate our descriptors and our scores Q Grader Exam Style. We will cup 6 tray triangulation tables and scale how different from control the odd cup out is perceived to be.

    • Roasting Challenge - Profile Migration From Ikawa To Production
    • Quality Control Challenge - Difference From Control Triangulation
    • Olfactory Bingo
    • Dinner and refreshments will be provided
    • 5:00 pm Raffle Drawing for a copy of Book of Roast (Thank you Roast Magazine!)

    This year’s roasting challenge will be transitioning a profile from a micro roasting device to a drum roaster. The Academy of Coffee Excellence has 3 Ikawa Pro Roasters and 4 drum roasters available for this challenge. It is very possible that even more equipment will be showing up.

    The attendees will be broken into small groups. Each group will be given 300 grams for their Ikawa Profiling to dial in their best roast. Then the teams will be given enough for 2 batches on their drum roasters. The challenge will be to match the Ikawa profile and verify it with a blind Difference From Control Triangulation Cupping.

    Another sensory activity that will be going on will be Olfactory Bingo. With our ScentONE kits and our Le Nez kits we will have constructed 5x5 Olfactory Bingo Cards.

    9:00 am Event orientation

    9:30 am  - 12:00 noon Cupping activity and calibration. Attendees will be cupping at one of six or seven 5 Cup / 6 Tray coffee cupping tables. (Q Style)

    12:00 noon - 2:00 pm Foodatude Food Truck is serving the lunch menu

    12:00 noon - 12:45 pm Lunch "Ask the Grower" with people from Gold Mountain Coffee Growers and Selva Negra Estate Coffee. In the front classroom

    12:00 noon - 12:45 pm Lunch "Ask the Importer" with people from Ally Coffee and Balzac Brothers in the Sensory room.

    12:00 noon - 12:45 pm Lunch "Ask the Manufacturer" with people from Roaster Dynamics and Ikawa in the roasting room.

    12:45 pm - 4:00 pm Half of the group will go to the roasting room to begin the roasting challenge. When they complete the challenge roasts they will then go to the sensory room for Triangulation Difference From Control. 

    12:45 pm - 4:00 pm Half of the group will go to the sensory room for Triangulation Difference From Control. When they complete the Difference From Control activity they will then go to the roasting room to begin the roasting challenge.

    4:00 pm - 5:30 pm Evaluation of the roast challenge activity by using the skills from the Difference From Control activity. One group will QA another groups' coffee.

    5:00 pm - 7:00 pm Foodatude Food Truck is serving the dinner menu

    Sometime before midnight the party is over.

     

      Sunday March 25 Morning

      Morning Programming

      • If you are still here you are helping to clean up
      • If you are not cleaning up plan on saying farewell Saturday night
      • Whether you stay over Saturday night and leave Sunday is up to you
