This is a 4 Day course that greatly exceeds the requirements of the SCA Roasting Professional Certificate.
This is an advanced roasting course. We assume that you have experience operating a roaster, cupping, writing a business plan and writing coffee contracts. Prerequisite knowledge will not be taught.
Prepare to have your skills and knowledge challenged, tested and expanded.

This course is taught by a Q Grader Instructor, Green Coffee, Roasting, Sensory and Brewing Professional. It provides a solid understanding through applied experimentation of the interconnection of Green Coffee, Roasting, Sensory and Brewing.
We will examine topics ranging from precise control of a roaster to culinary science and sensory analysis to farming and processing of coffee cherries. Roaster Professional graduates will leave the program with a depth of insight and experience necessary to innovate and lead in specialty coffee. During our Roasting Professional Advanced Course you will do the following:
Broaden and deepen the skillset developed in the Roasting, Green Coffee, Sensory and Brewing courses.
Conduct specific structured roasting experiments designed to demonstrate how different roasting machine construction materials and designers’ points of view impact how a machine transfers heat to coffee, and how substantively different green coffee receives that heat.
You will further your roast profiling knowledge by demonstrating precise control of a roast’s application of heat and airflow and experiencing how organic acid and flavor compound enhancement (and destruction) occurs during your roast cycles.
Your profile roasting skills will be challenged to create subtle changes in heat energy and airflow specifically to enhance perceived acidity.
You will connect the decisions that you made during these experiments with the sensorial perceptions on the cupping tables.
You will experience exercises designed to build the skillset required to participate or create a Quality Control process.
You will create a business plan designed around managing significant volume expansion. The business plan will include: capacity analysis and forecasting, coffee contract planning and forecasting, introduction of new product lines and FDA Food Safety Compliance (FSMA).

This 4-Day course covers a great deal of content. Attendees should plan to be at the Academy of Coffee Excellence from 8:00am (08:00) to 5:30pm (17:30) each day.
The SCA Roaster Professional Certificate Exams are available to those who qualify.
