Roaster Professional / Roaster Level 2 will examine topics ranging from precise control of a roaster to culinary science and sensory analysis to farming and processing of coffee cherries. Roaster Professional / Level 2 graduates will leave the program with a depth of insight and experience necessary to innovate and lead in specialty coffee. During the SCA Roasting Professional Certificate Course you will do the following.

  • Broaden and deepen the skillset developed in the Roaster Intermediate / Roaster Level 1 Certificate Course
  • Conduct specific structured roasting experiments designed to demonstrate how different roasting machine construction materials and designers’ points of view impact how a machine transfers heat to coffee
  • You will further your roast profiling knowledge by demonstrating precise control of a roast’s application of heat and airflow at specific points during the roast
  • Your profile roasting knowledge will be enhanced with information regarding organic acid enhancement and destruction during the roast cycle
  • Your profile roasting skills will be challenged to create subtle changes in heat energy and airflow specifically to enhance perceived acidity
  • You will connect the decisions that you made during these experiments with the sensorial perceptions on the cupping tables
  • You will experience exercises designed to build the skillset required to participate or create a Quality Control process

This Certificate Course is lead by a Roasting Professional and Q Grader Instructor. The course size is limited to 6 people to ensure a dedicated and personal educational experience. 

The exercises conducted during the coursework will prepare you to take the Roasting Professional Practical Exam. The Practical Exam consists of 5 exercises designed to enable you to demonstrate principles of heat transfer and precise control of a profile.

  • Morning coffee, fruit, baked goods, snacks and lunch each day 

This 4-Day course covers a great deal of content. Attendees should plan to be at the Academy of Coffee Excellence from 8:00am (08:00) to 5:30pm (17:30) each day.

The Roaster Professional Certificate Course has required and recommended prerequisites that are listed below.

  • Mandatory: Roaster Intermediate Certificate OR Roaster Level 1 Certificate
  • Strongly Recommended: Coffee Foundations
  • Strongly Recommended: Sensory Intermediate OR Coffee Taster Level 1
  • Recommended: Green Coffee Intermediate OR Coffee Buyer Level 1 

Day 4 Afternoon

Practical and Written Exams take place the afternoon of Day 4. There is a separate SCA registration, not included with this course, to take the Practical and Written Exams and upon passing, the Certificate Issuance. To register for this course's exams follow the Exam and Certificate Issuance Link.
